Halal Gyudon (Beef Bowl)

Assalamulaykum,
Have you ever tried Halal Gyudon (Beef Bowl) in the restaurant?
Unfortunately, in the place where I live there is no Halal Gyudon shop.
Gyudon is usually cooked with Sake (or Japanese rice wine) and Mirin (which contain alcohol) and uses non-halal beef. But I have to find a way to try this famous Japanese traditional food. And the only possible way is to cook Halal Gyudon by myself. I found the recipe on the internet (Youtube Channel; Cooking With Dog:https://www.youtube.com/channel/UCpprBWvibvmOlI8yJOEAAjA), and I modified a little bit because Muslims cannot use any alcohol for cooking.
Here is the recipe:

Halal Gyudon Recipe :
200 g thin sliced beef
Ginger 5 grams (grated)
2 Tbs Japanese soy sauce (you can add more)
1 Onion thinly sliced
2 Tbs Sweet soy sauce
1 Tbs Brown Sugar
1/4 Lemon Juice
1 Tbs Granulated fish stock/Dashi
Scallion for topping
Directions:
Boil the beef until color changes, drain and set aside.
Boil 100ml of water and add all the ingredients, bring to boil, add the beef and wait until the soup thickens.
Now it’s ready to serve with hot rice.
